Mushroom with fresh parsley

This traditional soup comes from the authentic recipe of our cheeky Grandma Olivia. For extra flavour, she roasts mushrooms in the oven first. Then she gently lets mushroom, oregano, thyme and fresh parsley bubble away for hours. While she waits, she’ll sing a song with a beer in her hand – she can sing and drink beer with the best of them. Grandma Olivia is full of juicy stories and loves to share them in the pub.
